It is plant based, easily digestible (I pre-soak the beans) and is super easy and quick to make!!

Vegetarian Chili

Serves: 4

Ingredients:

1⁄2 cup dry adzuki beans

soaked 8 hours

1⁄4 cups dry garbanzo beans, soaked 8 hours

3 cups sweet potato, finely chopped

1 3⁄4 cup yellow onion, finely chopped

1 cup carrots, finely chopped

4 ounces mushrooms, chopped

3 garlic cloves, minced

1⁄2 cup sun dried tomato, finely chopped

1 1⁄2 Tablespoons cumin

1 Tablespoon chili powder + 1 teaspoon

1-2 teaspoons chili flakes

1⁄2 teaspoon cinnamon

1 teaspoon sea salt

1 Tablespoon olive oil

2 Tablespoons tamari (organic & wheat free)

1⁄2 Tablespoon maple syrup

4 1⁄2 cups water

Alternative Add IN (for meat eaters): cook 1/2 lb. of ground turkey over the stove and add it to the soup with about 1-2 hours left of cooking time. Add additional 1 cup water if adding turkey.

Directions:

  1. Sort through adzuki and garbanzo beans and discard any discolored or moldy beans. Soak beans in water for eight hours or overnight to help the beans become more digestible.
  2. Rinse beans when ready to use and add to crockpot.
  3. Chop sweet potatoes, onion, and carrots to about the size of the width of your thumb. Add to crockpot. Chop mushrooms and add to crockpot.
  4. Mince garlic and chop sun dried tomatoes, and add to crockpot. Add all spices, salt, and liquid.
  5. Cook on low, overnight, or at least eight hours. Serve with slices of fresh avocado, or pieces of your favorite bread. Enjoy on a cold wintry evening.
