Abundant Vegetable Soup

During the Follicular Phase a.k.a. “inner spring,” in our Menstrual Cycle, our bodies are maturing eggs in the ovaries in preparation for ovulation.

At this time, it is important to eat foods that are high in vitamins A and C, which will help with healthy egg maturation. Vitamin C helps build cervical fluid, which should increase during your Follicular phase leading up to ovulation, where it is most bountiful. Cervical fluid is necessary for creating ideal environments for fertility and conception.

My Abundant Vegetable Soup is loaded with healthy vegetables providing the necessary vitamins to aid your hormones at this time of your cycle. Made in a crock-pot, the steps are as simple as chopping the veggies and plugging in the crock-pot (and some waiting time, of course  ). This soup is ideal for the winter, as colder outer temperatures cause the need for warming foods to provide internal heat. There is a bit of spice in this soup from the black pepper and red pepper flakes, and it will leave you feeling warm-hearted <3. You and your family can warm up the leftovers throughout the week, or you can freeze the rest of the soup to be eaten at a time when you have less energy to cook!

Not in your Follicular phase? Or no longer menstruating? That’s alright, this soup makes a great meal because it is full of vitamins and whole food fiber, so you can enjoy it anytime. Cheers!

Abundant Vegetable Soup

Serves: one large crockpot

Ingredients:

1 cup onion, chopped
3 carrots, about 2 ½ cups
2 ribs celery, 1 ½ cups
4 garlic, minced (about 1 tablespoon)
5 ¼ cup veggie stock
2 cups tomatoes, blended
1 cup tomatoes, chopped
2 cups broccoli, chopped and packed
1 ¼ cups zucchini,  chopped
1 cup parsnip, chopped
½ cup parsley, chopped
½ cup, frozen sweet corn, non gmo
¾ cup lima beans, sorted
1 teaspoon cumin
1/2 teaspoon black pepper
2 ½ teaspoons sea salt
1 teaspoon red pepper flakes (or less if you prefer less spicy)
1 teaspoon Italian Seasoning
1 teaspoon maple syrup
1 tablespoon sun dried tomatoes

Directions:

1. Sort through the lima beans. Discard any rocks or beans that are discolored.
2. Chop veggies and mince garlic and add to a large crockpot.
3. Blend tomatoes and add to crockpot.
4. Add veggie stock, spices, and salt. Add less of black pepper and chili flakes if you want less spice.
5. Cook on low for 10 hours.
